Abstract
La cúrcuma (Curcuma longa L.) es una planta de la Familia Zingiberaceae originaria del sudeste asiático. Es conocida mundialmente como especia aromática, utilizada en la gastronomía asiática para dar un toque de color y sabor picante a los platos. Los compuestos fitoquímicos presentes en su rizoma anaranjado característico, los curcuminoides, le confieren a esta planta importantes propiedades medicinales. Este trabajo tiene como objetivo realizar una descripción panorámica de la cúrcuma, detallando sus aspectos botánicos, su origen, datos históricos y gastronómicos, los diferentes usos que se le dan en la industria, su composición nutricional y compuestos característicos, así como las variedades que existen y las formas de cultivarlas.
Turmeric (Curcuma longa L.) is a species of Zingiberaceae family. It is native to Southeast Asia. It is known worldwide as aromatic spice used in Asian cuisine for a touch of color and spicy flavor to dishes. Their phytochemicals are curcumunoids, substances that give its distinctive orange rootstock. This work aims to make a panoramic description of turmeric, detailing their botanical aspects, origin, historical and gastronomic data, the different uses that are given in the industry, its nutritional composition and characteristic compounds and varieties that exist and how to grow them.
